Orange kissed pancakes

BONJOUR EVERYBODY!
WHEN I WAS A YOUNG GIRL, I LIVED  IN PARIS.
 PARIS TRULY IS  A CITY OF FOOD.

THERE I LOVED TO EAT FAMOUS CREPE SUZETTE.
THAT CAME IN MY MIND,WHEN I WAS COOKING A BREAKFAST AT MY FRIENDS HOUSE YESTERDAY.
I NEVER REALLY FOLLOW THE RECEIPE ... I TRY TO CREATE SOMETHING NEW..LITTLE DIFFERENT TOUCH HERE AND THERE...
-THAT REALLY IS MY PHILOSOPHY WITH COOKING.
IT IS ALWAYS  INTERESTING TO DO SOMETHING THAT YOU HAVE NEVER DONE BEFORE.
FOR THE CREPE SUZETTE I WANTED TO USE SPELT FLOUR AS IT IS  MORE HEALTHY THAN WHITE FLOUR .
...SO IT MAKES YOU EVEN MORE HAPPY TO EAT.

P.S if you have some helpfull kids around,
like i had..get theme to help you. Pancakes are more fun to make, when you have nice and cute company....

I made my pancakes with 2 different side dishes.
Pancakes are so fantastic, because you can eat them however you want.

So now lets rock the pancakes!

ORANGE KISSED PANCAKES

1 l   organic whole milk
5     egs
5ts   organic fine brownsugar
5dl  organic speltflour
3ts  cristalsalt
1ts  baking power
4ts  melt butter
 1   big orange


take a large bowl, beat the eggs and milk together, add orangejuice.
Take another bowl and add flour, sugar, baking power, salt.
Melt the butter in medium heat, whisk the melted butter into the milk mixture.
Add the wet ingredients to the flour mixture and whisk until a thick batter is  formed.

Keep the pan  at medium heat, to make the pancakes  add about 1 small cup of the batter  per pancake  into the pan. Make 1 or 2 more pancakes,taking care to keep them evenly spaced apart.
Cook about 3 minutes - until bubbles break surface of the pancakes and the undersides are golden brown.


Salty and Sweet side dish

HONEY ROUST NUTS AND ALMONDS WITH COCONUTS AND SUNKISSED RAISINS .  .

Mix nuts ,almond and raisins together.
Heat the pan in medium , fry  about 5-7 min
Add coconuts, heat it for 2 min.
Remove from the pan, add honey and mix well.


MEXICO DREAM GUACAMOLE

2 avocados
2ts cristalsalt
2 red onion
2 lime
1 small red chili
1 ts black pepper
2 tomato
coriander


Cut the avocados in half,remove seed,scoop avocado from peel,add in a mixing bowl.add some lime,so it won´t get brown.cut onions,chili,tomatos.mush the avocados ,mixit whit onions,tomato and chli,I liket really hot ,so if you want some more heat?please be my guest...now add more lime,salt ,pepper and finnally my love coriander...ouh yammy.

Bouillabasse a la NInja

Last night I got together with my friends at the countryside and i made a soup that had been on my mind long time...the french classic Bouillabasse is something that i have adored.

I went to Hakaniemi market in  Helsinki and grapped from there what i saw to be inspiring for the night

so i used for soup for 6 person

400 g salmon,
250g clams
150g smoked clams
1 turnip
5 carrots
4 small onions
5 clove of garlic
4 leafs of kale
1/2 green pepper
1/2 red pepper
small fingersize gingember
fresh basilic
3 teaspoon salt
1 teaspoon black pepper
1 teaspoon sahram
200g tomato puree
400g  smashed tomatos (fresh or in can)
1 l water
3dl white wine
1/2 dl  fish sauce
1/2 dl mirin sauce
butter
olive oil


Chopped all the veggies, cut garlic, onion and ginger. Put the pan on the heat, add olive oil and butter once melt add onions, wait until golden and then add all the veggies. (NOT YET GARLIC AND GINGER :) )
Fry them for a while on a medium heat. Add little bit of salt and pepper.
Add 1 L water. Let them boil until al dente.
Then add tomato puree. Let it mingle a bit and then add smashed tomatos.
And then the show really starts...
cut the fish and add it to soup
let it boil max 5 min
wash the clams (always make they are fresh)
add them to the soup
again let boil for 5  min
add the smoke clams.Now lets spice it up!
add garlic, ginger, fish sauce, pepper, mirin sauce, sahram, white wine and at very last basilic.

let it dance in medium heat for 5 minutes.
Make sure the flavors are in balance...

light some candels, open the wine and if the music hasnt been on  before, please remember to press to play now to some soulsoothing music! :)

and now serve some love on the table
